You need to make sure the tracks are assigned to individual inputs- unlike pro tools, you cannot record the same input to multiple tracks. The fast way to increment is in the track option window. At the top, by the input, there is an increment button. Tracks can be mono or stereo- you don't need to specify until you set your input. Mono (Mix) is a sum of the two inputs on your stereo channel to a single mono file.

After your input routing is done, Click on the record button while holding the shift and alt keys. This will enable all record buttons that can be enabled.
